Rhubarb and Ginger Cupcakes

My husband had some spare rhubarb at work and we had ginger from a recipe we tried a few weeks ago. So I thought lets combine the two. The recipe is based on a Jamie Oliver Recipe. Although if you have read any of my food blogs up to this point, you may know I see recipes as guidelines and not rules to stick by. I also don’t always check I have all the ingredients before baking.

Today I didn’t have enough Plain Flour, so did a Self Raising/Plain Hybrid. I didn’t have brown sugar either, so I just used a granulated/caster hybrid and added honey, which can’t be a bad thing surely?

They tasted delicious, even my husband loved them. He is not normally a rhubarb fan. They are perfect with a cup of tea!

  1. Ooo this is such a great idea. I always have leftover ginger which I never know what to do.
